To carry out the activities related to baking and pastries adequately, it is of utmost importance to conduct and carry out the operations of manufacturing bakery and pastries products, achieving the established production and quality objectives, respecting at all times the current technical-sanitary, environmental and occupational safety and hygiene regulations. Therefore, this course seeks to provide the necessary knowledge to carry out and/or direct the operations of making bakery and pastry doughs, specifically the production of bakery products.

Objectives

- Formulate and carry out the dosage and kneading of the ingredients necessary to make bakery products, achieving the required quality and hygiene. - Apply the techniques of division, balling, resting, forming, boarding, fermentation and kneading appropriate to each type of dough and product to be made, achieving the required quality and hygiene. - Recognize and apply the cooking and cooling method required for each product. - Apply industrial cold treatments in the different phases of the bakery product production process, achieving the required levels of quality and conservation.

Career opportunities

The qualified professional in "Bakery-pastries" will act in the Production Department although in constant relationship with the quality and logistics departments, where applicable, of semi-industrial or industrial bakery and pastry companies, of a public or private nature. Likewise, this professional may carry out his or her work in hotels, restaurants and small artisan workshops, as a self-employed worker (owner, partner of the company or hired).

What it prepares you for

This training is in accordance with the training itinerary of the Training Unit UF0291 Preparation of Bakery Products, certifying that you have passed the different Units of Competence included in it, and is aimed at the accreditation of the professional Competencies acquired through work experience and non-formal training, through which you will opt to obtain the corresponding Certificate of Professionalism, through the respective calls published by the different Autonomous Communities, as well as your own. Ministry of Labor (Royal Decree 659/2023, of July 18, which develops the organization of the Vocational Training System and establishes a permanent procedure for the accreditation of professional skills acquired through work experience or non-formal training).
