According to European Regulation 1169/2011, a, all companies in the Food Sector must implement, on a mandatory basis, a series of measures aimed at eliminating or minimizing any food risk to the Health of Consumers. This course on allergen management in stores and businesses offers students a guide on the implementation of allergen management and control plans, specifically on the importance of correct labeling and information provided to the consumer about the components of the food. Food establishments that do not comply with the self-control techniques in terms of food safety set out in European regulation 1169/2011 face sanctions from €5,000 to €5,000. €600,000 (Law 17/2011).
