Summary

In the field of the world of food industries it is necessary to know the elaboration of consumer and dairy products. Thus, with this course it is intended to provide the necessary knowledge to know the elaboration of ice cream.

Goals

- Describe the physical-chemical and microbiological characteristics of ice cream. - Analyze ice cream processing procedures, relating the necessary operations, entry and exit products and the media used. - Apply the necessary techniques for the manufacture of ice cream, achieving the required quality and hygiene. - Identify the requirements and perform first level preparation and maintenance operations of ice cream elaboration equipment. - Analyze and systematize sampling techniques and physical-chemical and organoleptic analysis for the verification of quality and parameters established in ice cream and similar products.

This training is adjusted to the training itinerary of the Formative Unit UF1283 Ice cream elaboration certifying having overcome the different competence units included, and is aimed at the accreditation of the professional competences acquired through the work experience and the non -formal training, via which will opt for obtaining the corresponding certificate of professionalism, through the respective calls that are publishing the different communities Autonomous, as well as the Ministry of Labor itself (Royal Decree 659/2023, of July 18, which develops the management of the professional training system and establishes a permanent procedure for the accreditation of professional competences acquired by work experience or non -formal training).
