Resumen

Within the world of food industries it is necessary to know the different fields in obtaining olive oils, within the professional area of oils and fats. Thus, with this course it is intended to provide the necessary knowledge for obtaining olive pomace oils.

Objetivos

- Apply the techniques of preparation of the pomiles, alperujos and olive oils, safely operating the necessary equipment, to achieve the required quality. - Identify the processing stages, infrastructure and carry out top -level preparation and maintenance operations of the production equipment of an ears, to obtain olive pomace oils. - Identify and characterize the operations of the pomantage necessary to ensure the processing of the final product from central panels. - Develop adequate analysis methods to verify the results of the samples taken during the production process of the prayer. - Apply the necessary protection measures to guarantee safety during the process in the pomile. - Identify and characterize the stages of good waste management and discharged in the activity of the pomantie and verify that it is carried out according to the environmental regulations.
