Objetivos

- Determine the characteristics of the raw materials, auxiliaries and materials that will intervene in the elaboration of wine distillates and vinification by -products (such as pomiles, feces, lines), concentrated musts and vinegar and other derived products, ensuring the required production and quality. - Determine and supervise the processes of elaboration of wine distillates and vinification by -products (pomiles, feces, lines), concentrated musts and vinegars, setting for each operation the necessary equipment and supplies and the control parameters, according to the prescriptions established in the procedure manuals. - Supervise the preparation, cleaning and maintenance of machines and equipment for the preparation of wine distillates and vinification by -products, concentrated musts and vinegar to ensure the proper functioning of the process. - Supervise in the workplace the necessary protection measures to guarantee occupational safety and food hygiene, in the area of obtaining distillates, concentrated musts, vinegars and other grape derivatives. - Apply analytical and sensory control techniques in the process of preparing wine distillates and vinification by -products, concentrated musts and vinegar and other diversification products, according to the established procedures.
