BPH and APPCC Course: MF2137_3 Good Hygiene Practices Procedures (BPH) and the Danger Analysis System and Critical Control Points (APPCC)

In the field of Agrarian, it is necessary to know the different fields of assistance in health controls in slaughterhouses, hunting manipulation establishments and exploded rooms, within the professional livestock area. Thus, this course is intended to provide the necessary knowledge to carry out operations related to the development of good hygiene practices (BPH) and the hazard analysis system and critical control points (APPCC).

- Define hygienic design criteria and maintenance of establishments that market meats and spoils according to the hygienic requirements required by the regulations. - Apply techniques to assess the hygiene status of facilities, equipment and tools prior to the sacrifice of animals taking into account cleaning and disinfection procedures. - Specify staff hygiene and work practices according to the regulations, estimating their health impact on obtaining meat. - Evaluate animal welfare and hygiene requirements in sacrifice operations depending on the species of supply, birds and hunting. - Specify Operations of Faenado de Sleepcies channels of supply, birds and hunting taking into account food safety and food safety criteria. - Analyze conditioning factors for hygiene and food safety during the preparation and management of channels and spoils of supply species, birds and hunting, distinguishing hygienic practices. - Evaluate the application of general hygiene programs described in BPH and APPCC procedures through visual inspection and documentary control.

He develops his professional activity as a dependent worker, being part of an inspection team, in slaughterhouses in which abasting animals (ugulated, birds, lagomorphs) and breeding hunting are sacrificed and slaughtered, enchanted one of the areas of the sacrifice and slaughter line: reception of animals, stunning, sacrifice, bleed of channels, in exploded rooms in which they bonate, win and prepare channels and in hunting manipulation establishments where hunting and flesh are prepared, under the supervision and guidance of the person responsible for health controls.

This formation is adjusted to the training itinerary of the MF2137_3 Training Procedures of Hygiene Practices (BPH) and the Danger Analysis System and Critical Control Points (APPCC), certifying having exceeded the different competition units included in it, and is aimed at the accreditation of the professional competences acquired through work experience and non -formal training, via which it will of the corresponding certificate of professionalism, through the respective calls that are publishing the different autonomous communities, as well as the Ministry of Labor itself (Royal Decree 659/2023, of July 18, which develops the management of the professional training system and establishes a permanent procedure for the accreditation of professional competences acquired by work experience or non -formal training).

This course is aimed at the professionals of the world of Agrarian, specifically in assistance in health controls in slaughterhouses, hunting manipulation establishments and exploded rooms, within the professional livestock area, and to all those people interested in acquiring knowledge necessary to perform operations related to the development of good hygiene practices (BPH) and the hazard analysis system and critical control points (APPCC).

This training is not included in the scope of official regulated training (Infant Education, Primary Education, Secondary Education, Official Professional Training FP, Baccalaureate, University Degree, Official University Master and PhD). It is therefore a complementary and/or specialization training, aimed at acquiring certain skills, skills or aptitudes of a professional nature, being able to be barely as merit in workbags and/or opposition competitions, always within the complementary training section and/or continuous training being always essential to review the specific requirements of the public labor stock of the public labor stock market.
