This postgraduate degree in food science and technology explains the technological processes used in the food industry, doing a global study on animal food technology, through biochemical aspects, its components and technological treatments that usually apply to them for commercialization. Thanks to the postgraduate degree in food science and technology, the student will reach a global and complete vision composed of the compendium of functions and concepts that besieged the field of food security. We approach the awareness of all professionals in the food field of the importance of their work, on their good practices, since they depend on them, to a large extent, that food security in the population is extended. The course is intended to form in the scope of hazard analysis systems and critical control points, in order to avoid contaminated food and implement the APPCC Self -Control System in companies.

- Know the application of sorption isotherms in food technology. - Learn the objectives of food technology. - Know the characteristics of refrigerated foods. - Learn the usefulness of enzymes in food technology. - Know the factors that modify the boiling point and energy transfer in food technology. - Know the general characteristics of food technology. - Learn the types of fermented milks that exist. - Know the structure and characteristics of a meat restructured product. - Know food freezing methods by applying cold. - Learn the modifications of food retention capacity. - Get good habits in food security. - Know the APPCC system and its phases. - Acquire knowledge about cleaning and disinfection properly. - Identify critical dangers and control points. - Acquire technical and theoretical knowledge

A quién va dirigido

The course in food science and technology is aimed at all students of the various degrees in which food study, such as pharmacy, veterinary, food science and technology, to any graduate with general knowledge of chemistry, microbiology is contemplated. In general, those who want to enter the world of food security, as well as in the composition of the APPCC system, already have previous knowledge about it or not.

This training is not included in the scope of official regulated training (Infant Education, Primary Education, Secondary Education, Official Professional Training FP, Baccalaureate, University Degree, Official University Master and PhD). It is therefore a complementary and/or specialization training, aimed at acquiring certain skills, skills or aptitudes of a professional nature, being able to be barely as merit in workbags and/or opposition competitions, always within the complementary training section and/or continuous training being always essential to review the specific requirements of the public labor stock of the public labor stock market.
