Summary

At present, in the world of restoration, it is very important to know how to develop the pre -elaboration, preparation, presentation and conservation processes of all kinds of food and define gastronomic offers, autonomy applying the corresponding techniques, achieving the established quality and economic objectives and respecting the norms and practices of safety and hygiene in the food manipulation. Therefore, with this course it is about providing the necessary knowledge to define simple gastronomic offers, make the supply and control consumption.

Goals

- Analyze the restoration sector. - Analyze and define gastronomic offers type menus, letters or other significant offers (galas, banquets ...) .. - Define features of food and drinks taking into account certain gastronomic offers and the level of quality of products. - Calculate the external and internal supply needs of genders associated with determined gastronomic offers, writing the requests of petition. - Develop the internal provisioning process of basic genders and elaborations of multiple applications according to the gastronomic offers or specific work plans, referring to vegetables, dry legumes, pasta, rice and eggs. - Make the reception of food and drinks for later storage and distribution. - Analyze food and drink storage systems and execute inherent operations according to the selected systems. - Calculate raw material costs to estimate possible prices of associated gastronomic offers.

It develops its professional activity in both large and medium -sized businesses, mainly from the hospitality sector, although it can also work on your own in small establishments of the restoration subsector.

This course will provide students with the necessary knowledge to define simple gastronomic offers, perform the provisioning and control consumption. The present training is adjusted to the training itinerary of the MF0259_2 -2_2 training itinerary Through the work experience and non -formal training, via which will opt for obtaining the corresponding certificate of professionalism, through the respective calls that are publishing the different autonomous communities, as well as the Ministry of Labor itself (Roy formal).
