Summary
Thanks to this in progress in therapeutic cuisine you can know firsthand everything related to food that is available in our basic diet. We will delve into its nutritional value and in the nutritional composition, in which groups are grouped based on their nutritional content, as well as what are the culinary techniques that we can perform to enhance its flavor without losing all the content of its nutrients. In addition, we will expand in knowledge of preparation, elaboration and conservation so that we can make the most of those foods we obtain. Once with this basic knowledge, we will specify in the therapeutic cuisine specialized in allergies, more common intolerances today. Finally, Mediterranean cuisine as a health factor.

To prepare you
With this course in therapeutic cuisine you will have the possibility of learning the new trends within the world of cuisine adapted to the improvement of the nutritional status of the population and the improvement of pathological alterations. The concepts of composition and nutritional assessment of food will be addressed until the formulation of menus adapted to allergies/intolerances and the premises of the Mediterranean cuisine.
Who is it addressed to?
This course is aimed at dietitians and nutritionists. Although it is a degree within the teachings of the university that does not enable professional practice, so according to article 37.7 of Royal Decree 822/2021, of September 28, which establishes the organization of university teachings and the procedure for assuring their quality for the degrees encompassed within the teachings that do not require university degrees Previous for access to them, the purpose of them is the extension and update of knowledge, competences and training or professional skills that contribute to a better labor insertion of citizens and citizens without university degree, so it will be open to every person without health university degrees that have an interest in carrying it out.

This training is not included in the scope of official regulated training (Infant Education, Primary Education, Secondary Education, Official Professional Training FP, Baccalaureate, University Degree, Official University Master and PhD).
